Prawn Nori Cracker with Yuzu Mayonnaise
Prawns are a huge staple in Chinese New Year meals because its pronunciation in Cantonese (har) echoing the sound of ringing laughter. “According to tradition, when you eat it, you will be filled with happiness and laugh 'har har. ' The more you eat, the happier your family will be in the new year.”

Ingredients
1/3 cup Corn Flour
1 Nori Sheet (crushed into small pieces)
5 Prawn (medium size)
1 pinch Cooking Salt
1 litre (or more if necessary) Oil for frying
KEWPIE Yuzu Mayonnaise for dipping
- Mix corn flour and crushed nori sheets in a bowl.
- Lay a sheet of cling film on a chopping board and place prawns on top with each piece well-spaced out or you can do this couple of pieces at a time. Sprinkle over corn flour and nori mixture from step 1 then place another layer of cling film over the top. Use a meat hammer or something similar to gently flatten the prawns into thin sheets.
- Preheat oil to 180 ~ 200°C. Gently remove the top layer of cling film, sprinkle more corn flour, then remove the prawn from bottom layer of cling film and cook in oil for 5 mins or until crispy.
- Once cooked, drain excess oil and serve with Yuzu mayonnaise.
